I don’t know about ya’ll, but is it summer yet?? We are running all over the place getting here and there and it has been BUSY. I needed something I could throw in the crockpot and be done with dinner before we left for the day. Lawton was having a friend over to spend the night, so I thought something easy and “kid-friendly” would be perfect. I searched Pinterest and found this Buffalo Chicken Slider Recipe.
I was hoping it wouldn’t be too spicy and it wasn’t thank goodness – I got the mild sauce and it was perfect. I used 3 chicken breasts but should have used more….I had enough for lunch for one day and Houston, Lawton’s friend ate 2 sliders….so, 3 breasts were enough for 7 sliders. Double if you are having a bunch of tweens/teens over – it is the perfect meal for that!!
Houston and Lawton approved! I served with potato chips and fruit. I forgot to get a picture of Jack, be he gave it a thumbs up too. To end the meal, we had Strawberries layered with cool whip and angel food cake. It was such a nice reprieve from ordering pizza on a Friday night. If you want to try, the recipe is below!
BUFFALO CHICKEN SLIDERS – perfect for a crowd and game day meals!
2 lbs boneless, skinless chicken breasts
1 cup wing sauce, divided
1/2 onion, chopped finely
12 slider buns
- In a slow cooker, add chicken breasts and top with 1/2 cup wing sauce and onions. Cover and cook on low for 6-7 hours or high for 4-5 hours.
- Remove chicken from slow cooker and shred using 2 forks or stand mixer. Reserve 1/4 cup of liquid from slow cooker, and discard the rest. Place shredded chicken back into slow cooker bowl, add 1/4 cup reserved liquid, and remaining 1/2 cup wing sauce. Stir to coat chicken.
- Place about 1/4 to 1/3 cup of chicken on each bun. Garnish with additional wing sauce and ranch dressing if desired. Enjoy!
