
I needed something quick and easy this week with our schedules. I’ll be honest, most of the recipes from Kristin Cavallari’s True Roots cookbook require a lot of ingredients and take a pretty long time to cook…..this looked very simple. My husband “doesn’t like chicken.” WTH. He claims his mom cooked a lot of it when he was growing up and “he will eat it”, but doesn’t enjoy it. When he saw my meal tonight his exact words were ” what is this.”

You know what it was? It was a healthy, decent meal that I put together between school pick up and football practice. Along with some Annies noodles and a frozen Trader Joes mushroom risotto. Sounds pretty good to me! The chicken was cooked perfectly (I was worried about that) and had some taste with the sage. According to Lawton, it tasted like regular chicken and Wyatt had seconds. And guess what? Jack liked it. WIN WIN.
If you need something that is healthy, fast, simple and you know your family will enjoy, this is for you. It isn’t the tastiest or the best, but it’s something. Bellies are full and it wasn’t chick-fil-a tonight…..that was Tuesday 😉
