
This weeks recipe was from 100 Days of Real Food. This is a great recipe book for families–she has a lot of lunch box ideas, etc for kids. I did the random pick and landed on Flank Steak Fajitas. The only time we ever cook flank steak is at the lake in the summertime, where Jack’s mom marinates it all day and we eat it for dinner – delish. We all enjoy steak, but I was iffy on if the boys would eat the onions and bell peppers that were in it. I have made chicken fajitas before and they acted like I was killing them with the bright peppers. Lord.

Who doesn’t love a crock pot recipe! (Here is the crock pot I have and love it!) We have sports every afternoon and I am literally in the car from 2:30-7,8 pm. This was a perfect recipe for the middle of the week. EASY and pretty cheap! I had the spices already and just had to get the steak, bell peppers, onion and monterey jack cheese.
Well, the boys LOVED IT!! Major HIT! They even liked the peppers and onion in them- SCORE. Wyatt did pull just a few peppers out, but for the most part, he ate them. AND He had seconds. Lawton even asked if there were peppers and ate them because you really couldn’t tell with them having been in the crock pot for 5 hours. It made a good amount and I had plenty for a few more meals, so this would be a great thing to make for a family of 5-6. Jack was out to dinner, so he will be eating this for lunch this week.
I had some rice on the side which neither of them wanted and Law had some cucumbers and ranch. Sides are hard with these boys! BUT, I will take it – a new recipe that was EASY, healthy and something we all like. WIN WIN! Let me know if you make this sometime 😉
