I am back to cooking! Gosh, the past few weeks have been filled with busy nights where I gave up and cooked eggs for dinner, got chick-fil-a, we had tacos, anything easy and QUICK! I love doing recipe roulette once a week for the kids (and us) to try new things and it is actually fun for me – so…. we back!
This week I did Goat cheese stuffed chicken from the Williams Sonoma Bride and Groom cookbook. This cookbook has classic recipes that I know we will like. This cost me about $24 to make – so, very cheap!
We ALL loved it!! I bought honey goat cheese and it was DELISH. The recipe called for you to pan fry it, but we all know how that worked for me last time with the pork chops (smoked out the house), so I baked them. The chicken was still great this way. So, all in all a HIT. I feel like the past few times have been so so, so this was nice to have everyone actually like it. Easy to make = we will have it again.
