
I was out to dinner with some friends recently and one of them suggested The Dude Diet cookbook for me to try out with the boys. She said every recipe that she has made from this cookbook, her family has loved. Yes, let’s give it a shot! They way it is written is pretty funny too – and they claim all the recipes are clean(ISH).
I landed on the Chicken Parm Quinoa Bake and thought it would be a good one to test out because 1) the kids like chicken and cheese and 2) they would be trying something new with the quinoa. This recipe was very easy to make, didn’t cost much, and made a lot for lunch/leftovers the next day.

3 out of 4 is a WIN in this house. Lawton liked it and gave it a 7, and tried the quinoa and said “this is quinoa? not so bad” – WIN PEOPLE, WIN. Jack and I loved it. So you can guess who didn’t. Wyatt spit his bite out in his bowl and then took his bowl to the sink and said I am going to save this do we don’t waste it….ummmm no thanks buddy, we don’t want your food that you chewed, then spit back out. Savages. I made him have at least 3 bites before he said it was not edible for him. He then told me “Mom, you can’t tell my tastebuds how to taste, it is what it is.” Wow. Okay dude. All in all this was a great recipe and I can’t wait to make another out of it this week. Here is the recipe below if you would like to try it! I bet it can feed up to 7 people. I would serve a small salad with it. Enjoy!
